Fragrant rice & Aromatic Turkey
Serves 1 portion
55g Uncooked Brown Rice
100ml Chicken Broth (Go for low salt version which is often described as low sodium)
220ml Water
Pinch of salt
200g turkey breast (remove any unwanted visible fat)
6g coconut oil
1/4 teaspoon Chinese 5 spice
5 ml soy sauce
115g baby spinach
40g spring onions chopped
sprinkle of fresh coriander
6g toasted sesame seeds
Cooking: Preheat the oven to 180 degrees
Mix the rice, salt, chicken broth and water in a medium sauce pan. Cover and bring to the boil, Stir occasionally until the rice is tender (30-40 minutes)
Place the turkey in a bowl and massage in the coconut oil, add the spices, then the soy sauce. Season with salt and pepper. Place in the oven and make sure you turn the turkey over half way through cooking. Once cooked leave to rest for 5 minutes (Follow turkey package guidelines for cooking because different sizes will require different cooking times)
Drain the cooked rice and whilst hot stir in the spinach, spring onions, coriander and juices from the turkey tray.
Serving: Place the thinly sliced turkey breast on a bed of rice and sprinkle with sesame seeds.
